As you may have figured by now, I LOVE coconut. It’s miraculous, in my opinion. I use it for SO many things!
In the past couple weeks I’ve made a few yummy things with coconut that I wanted to share.
To celebrate the 4th of July, we made a yummy red-white-and-blue coconut-milk ice cream.
strawberries, blueberries, and coconut milk,
mixed together in the ice cream maker for 20 minutes or so… delish!
Then I came across a recipe for these yummy-sounding Pina Colada bars, which were essentially just melty coconut butter mixed with pineapple puree and topped with shredded coconut. I didn’t have pineapple, but I did have strawberries!
So I whipped up a batch of coconut butter (dump 3-4 cups of shredded coconut into your food processor, and just let it do its thing for a while, scraping down the sides as needed), and dropped in some strawberries!
I pressed the mixture into an 8×8″ pyrex and refrigerated.
The result was a creamy, sweet-tart little bar!
I had also made a batch of gluten-free coconut flour-based graham crackers that I had found a recipe for, and in an “aha” moment decided to top a graham cracker with a strawberry cream bar!
Result: a nearly-cheesecake-like little treat! YUM! 🙂
I call them Strawberries ‘n’ Cream Coconut Butter Bars!
